Gram-positive rods (1 x 2-4 μm), occurring singly and in pairs. Nonmotile.
Grows better in MRS broth than on agar plates and under anaerobic conditions
after 3 days of incubation in MRS agar at 30 ºC, colonies are small (up to 1 mm in
diameter), circular, translucent and grey. Can grow at 13 ºC, but not at 4 or 45 ºC.
Isolated from rennin and regarded as causing cheese spoilage.

Positive results for alkaline phosphatase, cystine arylamidase, esculin hydrolysis, alpha- and beta-glucosidase, fermentation of:
L-arabinose, fructose, galactose, glucose (acid production without gas), N-acetylglucosamine, mannose, ribose, and D-xylose.

Negative results for arginine hydrolysis, catalase, esterase C4, esterase lipase C8, N-acetyl-beta-glucosaminidase,
beta-galactosidase, fermentation of: amygdalin, adonitol, D-arabinose, arabitol, arbutin, cellobiose, dulcitol, erythritol, esculin, fucose,
gentiobiose, gluconate, 2- or 5-ketogluconate, glycerol, glycogen, inositol, inulin, lactose, lyxose, melezitose, melibiose, raffinose,
rhamnose, salicin, sorbitol, sorbose, starch, trehalose, turanose, tagatose, xylitol, and L-xylose.

Variable results for acid production from mannitol, maltose, and sucrose.
