Gram-positive small coccobacilli, 1.0 x 1.5-2.0 µm, occurring singly or in pairs.
Non-motile. Non-spore-forming.
Colonies are smooth, greyish-white, opaque, convex, 0.5-0.7 mm in diameter after 2
days of incubation at 28 ºC on MRS agar. Can grow at 15-37 ºC, no growth at 45 ºC.
Can grow in 0-6% NaCl. Grows at pH 3.9-5.4. Facultative anaerobic.
Isolated from traditional Vietnamese nem chua.
