Gram-positive, slender rods, 0.3-0.6 x 4.0-6.0 µm, occuring singly, in pairs and in
chains (some strains have a strong tendency to form chains of long bent rods or even
resembling a vine tendril). Nonmotile.
Colonies on San Francisco agar are 1–2 mm in diameter, rough circular plateaus
with irregular borders and smooth convex centers, translucent, and grayish after 2–5
days of anaerobic incubation at 30 ºC. Grow at 15 ºC and 45 ºC. The terminal pH in
San  Francisco medium ranges from 3.9 to 4.2.
Isolated from rye sourdough.

Obligately heterofermentative. The main fermentation products from maltose or fructose are lactate, acetate, ethanol, glycerol, and
CO
2.

Positive results for arginine hydrolysis (NH
3 from arginine), fermentation of: fructose, and ribose.

Negative results for catalase, fermentation of: arabinose, cellobiose, esculin, mannitol, mannose, melezitose, and xylose.

Variable results for fermentation of: galactose, glucose (acid and gas production), gluconate, lactose, maltose, melibiose, raffinose,
and  sucrose.
