Rods (0.7 x 2.5 μm) with rounded ends, occurring singly, in pairs or in short chains.
Nonmotile.
Colonies on MRS are flat or little convex, wavy, or dentated with rough, dull surface,
beige to dirty-white; mean diameter 2.5 mm. Grow at 15 ºC and 42 ºC, optimum at
28-32 ºC. No growth at 45 ºC. Optimum pH is 5.5-6.5; minimum pH 3.7.
Isolated from spoiled soft drinks and from brewery environment.

Positive results gelatin hydrolysis, for fermentation of: amygdalin, arbutin, cellobiose, esculin, D-fructose, gluconate, glucose (without
gas production), galactose, gentibiose, lactose, mannose, maltose, melezitose, melibiose, raffinose, salicin, sucrose, trehalose,
tagatose, turanose, beta-methyl-D-glucoside, and N-acetylglucosamine.

Negative results for arginine hydrolysis, catalase, nitrate reduction, urease, fermentation of: adonitol, glycerol, glycogen, erythritol,
inositol, inulin, mannitol, rhamnose, ribose, sorbose, starch, xylitol, and beta-methyl-D-xyloside.

Variable results for fermentation of: arabinose, dulcitol, sorbitol, and xylose.
